Winches are designed to load and unload boats.  Winches not not to be used to keep your boat stabile while you are moving.  There isa few different types of trailing winches some powered some are used with a hand crank.  Trailer winches are rated by their capacity, not the length of the boat.  Heavier boats are going to require more powerful  trailer winches.
